Baked Mackerel with soya-apple sauce



While going through some of the mackerel recipes , I got  stucked on a recipe named , 

Japanese style slow cooked mackerel.I found it really very interesting and thought of giving it a 

tasty twist.I hope you will like the recipe.It is a sweet and sour preparation which can be served 

as an individual dish or can be served with rice or noodles.


INGREDIENTS

For marination:

4 fillet of Indian mackerel

Olive oil -1 tsp

fresh ginger paste 1/2 tsp
garlic paste 1/2 tsp
lemon juice
Dark soya sauce 1tbsp
salt as per taste(needed little as soya sauce is being added)
white pepper


For the Sauce:

1 large, hot, dried red chillies chopped
½ fist-sized piece of fresh ginger, very thinly sliced
3-4 large garlic cloves, thinly sliced
4 tbsp dark soy sauce
2 tbsp vinegar
salt as per taste(needed little as soya sauce is being added)
about 1/2 cup apple juice
white pepper
cornflour(optional)

Cooked rice or noodles


Steamed spinach, pak choi or other greens for garnishing


METHOD:

For Baking:


First marinate the fish fillets with all the ingredients mentioned above for 25-30 minutes.

Then Preheat the oven at 200 degree centigrade and bake the fish for 15-20 mins.

For the sauce:


1.In a pan add olive oil , put the chopped red chilli and thinly sliced garlic and ginger

    into the pan.Fry them for a while.Do not fry for long.


2.Now add the soya sauce, apple juice and the vinegar into this.

3.Boil them for few minutes.

4.Add white pepper and salt now,and if you want to make the gravy little thick add cornflour into    it.

5.Now check the seasoning before turning off the gas.

6.The Sauce is ready .Pour it on the baked fish and serve with rice/noodles and steamed 

    veggie of your choice.
